Posole

Ingredients

  • 1 bag NM Red Chili Pod or Powder Mix
  • 1 medium onion-finely chopped
  • 2 tablespoons of cooking oil
  • 2-3 lbs of Pork (Pork neck bones optional)
  • 1 teaspoon of dried
    oregano 1 bag (2 lbs) or 105oz canned hominy

Directions
Boil Hominy (Follow instructions on bag or can) Fry meat in
separate pan until browned.  Add onion, sauté until soft.  Add meat
mix to Hominy.  Add oregano and NM Red Chili Mix (as much as
desired)
Ready to Serve, 8-10 servings

Red Chili Chicken Wings

Ingredients

  • 1 Bag of NM Red Chili Mix Pod or Powder
  • 3 to 4 lbs chicken wings

Directions
Fry chicken wings in pan until-browned (Optional bake in oven
for 1 hour at 350degrees). Add 1 bag of NM Red Chili Pod or
Powder (Follow instructions on packet). Simmer on low heat 10 to
15 minutes
Ready to serve, 8-10 Servings

Red Chili Ribs

Ingredients

  • 1 Bag of NM Chili Pod Mix
  • 1 Slab of pork spare ribs

Directions
Preheat oven 350 degrees.
(Grease or spray pan with Pam)-Put ribs in roasting pan. Add
(Prepared) 1 bag of NM Chili Pod Mix (Follow directions on
packet-Change Blend only for 1 minute).  Pour over ribs- front and
back.   Cook in oven for two hours covered.  After 1 hour flip ribs
over, Gather and brush same chili- from roasting pan front and
back on ribs Cook remaining hour
left Ready to Serve (3-4 Servings)

Red or Green Chili Stew (Caldo)

Ingredients

  • 1 Bag of NM Chili Powder or Pod Mix
  • 2 lbs meat (beef, pork, chicken)
  • 10 Potatoes (Medium size)
  • 1 small onion
  • 1 tablespoon of cooking oil
  • 6-8 cups of water

Directions
Cut meat into 1”pieces.  Fry meat in pan until brewed.  Add onion (cut in ½ pieces) and fry for one minute.  Add 6 to 8 cups
water, Boil until potatoes are soft.  Add (NM Chili Powder or Pod to taste (Follow instructions on packet)
Ready to serve, 8- 10 servings

Carne Adovada

Ingredients

  • 1 Bag of NM Chili Pod Mix 5 lbs pork or chicken
  • 1 dozen flour tortillas

Directions
Make NM Chili Pod Mix (Follow instructions on packet)
Preheat oven to 300 degrees. Cut meat into 1” x 3” pieces.
Put in roasting pan, and add chili to pork.  Cover and cook in oven
for 3 hours covered. When ready to serve, warm up tortillas and make burritos or serve as main course,
Serves 6-8

Red or Green Chili Mashed Potato Turnover

Ingredients

  • 12 corn tortillas
  • Olive Oil (optional)
  • 1 bag of NM Chili Just Add Water chili powder
    or Pod (Prepared)
  • 2 cups shredded American cheese
  • Mashed Potatoes

Directions
Warm tortillas or fry tortillas in hot oil. Top tortilla with
mashed potatoes and shredded cheese and NM Chili Powder, and fold over like a taco. Ready to Eat.
Serves about 6-8 people

Red or Green Chili Beans

Ingredients

  • 1 1/2 pound of lean hamburger meat
  • 1 bag on NMchilijustaddwater
  • Homemade pinto beans

Directions
Cook your NMChili Just add water, following the instructions on the package and refrigerate what you don’t use. Cook your
hamburger meat until browned and crumpled (Salt meat to
taste) and mix beans and hamburger meat into NMchilijustaddwater chili on medium heat and you’re ready to eat.
Serves about 8-10

Frito Pie

Ingredients

  • 1 1/2 pound of lean hamburger meat
  • 1 bag on NMchilijustaddwater
  • American cheese or cheddar cheese
  • Chopped onion
  • Homemade pinto beans
  • Fritos

Directions
Cook your NMChili Just add water, following the instructions on the package. Cook your hamburger meat until browned and crumpled (Salt meat to taste) and mix beans and hamburger meat into NMchilijustaddwater chili on medium heat, and your sauce is ready. Add Fritos to each bowl, pour sauce over the top and add American or cheddar cheese.  Top with onions.
Frito Pie Serves about 8-10

Red Chili Con Carne

Cook your NMChili Just add water, following the instructions ont he package. Cook your hamburger meat until browned and crumpled (Salt meat to taste) and mix beans and hamburger meat into NMchilijustaddwater chili on medium heat, and your’re ready to eat.
Serves about 8-10

Red or Green Chili Burger

Ingredients

  • Hamburger meat
  • 1 bag of NMchilijustaddwater
  • American cheese
  • chopped onion
  • Lettuce
  • Hamburger Buns

Directions
Cook your NM Chili Just Add water, following the instructions on the package. Fry your hamburger to desired doneness, and pour NMchilijustaddwater chili over the top.  Garnish with American or cheddar cheese and finish with onions.
